½ CUP OF RAISINS ½ CUP OF PACKED BROWN SUGAR 1/3 CUP OF GRANULATED SUGAR 1 ¼ TEASPOON OF VANILLA EXTRACT ½ TEASPOON OF CINNAMON 1 (12 OZ.) CAN OF EVAPORATED FAT FREE MILK 3 LARGE EGG WHITES 1 LARGE EGG 10 CUPS OF DRIED CUBED WHITE OR WHEAT BREAD COOKING SPRAY GLAZE: 1 CUP OF LOW FAT MILK 1 TABLESPOON OF CORNSTARCH ½ CUP OF SUGAR 2 TABLESPOONS OF LIGHT BUTTER 3 TABLESPOONS OF LIGHT RASPBERRY PRESERVES COMBINE FIRST 9 INGREDIENTS IN A LARGE BOWL AND STIR WELL WITH A WHISK. ADD THE BREAD AND TOSS GENTLY. COVER AND CHILL FOR 1 HOUR. SPRAY YOUR CASSEROLE DISH WITH COOKING SPRAY 3 TIMES. SPOON THE BREAD MIXTURE INTO THE DISH. BAKE AT 350 DEGREES FOR 45 MINUTES OR UNTIL IT IS SET. FOR THE SAUCE, COMBINE 1 CUP OF MILK AND THE CORNSTARCH IN A BOWL, MIXING WELL. SET ASIDE. COMBINE ½ CUP OF SUGAR AND BUTTER IN A MEDIUM SAUCEPAN OVER MEDIUM HEAT. ONCE THE BUTTER HAS MELTED, ADD THE MILK MIXTURE AND BRING TO A BOIL. COOK THE MIXTURE UNTIL THICK, STIRRING CONSTANTLY. REMOVE FROM THE HEAT AND ADD THE RASPBERRY PRESERVES. DRIZZLE OVER THE BREAD PUDDING. ENJOY!! |
