T O M A T O   &   R O A S T E D   B E L L   P E P P E R   S A U C E

˝ CUP OF CHOPPED TOMATOES

˝ CUP OF CHOPPED ROASTED RED BELL PEPPER

1 TEASPOON OF TARRAGON VINEGAR

2 TABLESPOONS OF FRESH LIME JUICE

3 SMALL CLOVES OF FRESH GARLIC, PEELED

1 SLICE OF TOASTED FRENCH BREAD, IN PIECES

SALT & PEPPER

2 TEASPOONS OF OLIVE OIL

4 ORANGE ROUGHEY FISH FILETS

3 TEASPOONS OF FRESH TORN BASIL LEAVES

FOR THE SAUCE:

COMBINE THE FIRST 6 INGREDIENTS IN A BLENDER AND PUREE UNTIL SMOOTH. ADD SALT & PEPPER TO TASTE. SET ASIDE AND COOK THE FISH.

FOR THE FISH:

SEASON BOTH SIDES OF FILET WITH SALT & PEPPER. HEAT OIL IN SKILLET AND SPRAY WITH PAN SPRAY ON MEDIUM HEAT. PLACE THE FILET IN THE SKILLET AND LET COOK FOR ABOUT 4 MINUTES, TURN FILET OVER AND LET COOK ANOTHER 3 TO 4 MINUTES OR UNTIL FISH FLAKES EASILY. PLACE THE COOKED FILETS ON INDIVIDUAL PLATES AND TOP WITH THE SAUCE. GARNISH WITH THE FRESH TORN BASIL LEAVES. SERVE WITH RICE OR A SALAD. ENJOY!!
