1 MEDIUM SIZED ONION, DICED 1 POUND OF GROUND TURKEY TACO SEASONINGS 1 HEAD OF ROMAINE LETTUCE, CHOPPED 1 LARGE TOMATO, DICED 40 BAKED TOSTITOS CHIPS 1 (10 OZ.) CAN OF BLACK BEANS, DRAINED 1 CUP FAT FREE RANCH DRESSING ¼ CUP OF MILD SALSA 1 CUP OF AVOCADO, CHOPPED AND MASHED 1 CUP OF FAT FREE SHREDDED CHEDDAR CHEESE HEAT SKILLET WITH PAN SPRAY ON MEDIUM HEAT AND SAUTÉ ONIONS UNTIL THEY ARE TRANSLUCENT. ADD THE GROUND TURKEY AND STIR IN THE TACO SEASONINGS. COOK UNTIL BROWNED. REMOVE FROM HEAT AND DRAIN ANY EXCESS FAT AND SET ASIDE. IN A MEDIUM BOWL, MIX TOGETHER THE FAT FREE RANCH DRESSING, SALSA AND AVOCADO. KEEP DRESSING COOL. THIS CAN BE MADE AHEAD OF TIME TO MAKE SURE THE DRESSING IS COLD. PLACE LETTUCE ON INDIVIDUAL PLATES AND PLACE CHIPS IN BETWEEN THE LETTUCE LEAVES. TOP THIS WITH THE TACO TURKEY MEAT. ADD THE BEANS, TOMATOES, AND CUCUMBER. DRIZZLE THE AVOCADO RANCH DRESSING OVER SALAD AND THEN SPRINKLE WITH FAT FREE CHEDDAR CHEESE. ENJOY!!! |
